Pork and Asparagus Stirfry

Ingredients:
- 1/2 kilo pork loin, thinly sliced crosswise
- 1 bunch asparagus, cut into 1/2" lengths
- 1 small red bell pepper, cut into small strips
- 1 thump size ginger, cut into very thin strips
- 3 oz. of snow peas (optional)
- 1/4 head garlic, chopped
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1/4 cup cornstarch
- salt and pepper
- cooking oil
Preparation:
- In a big bowl place the pork and mix in the soy sauce and cornstarch.
- Marinate for at least 15 minutes.
- Heat wok until it starts to smoke, add in generous amount of oil
- Stir fry garlic and ginger until aromatic.
- Remove from wok and keep aside.
- On same wok strifry asparagus (and optional snow peas) for 2 to 3 minutes, remove from wok and keep aside.
- On same wok stirfry the marinated pork in batches, add more cooking oil as necessary for 5 to 8 minutes or until it start to render fats.
- When done with the rest of the pork, return all the stirfried ingredients to the wok.
- Add in the hoisin sauce and bell pepper, stir cook for another 1 to 2 minutes.
- Season with salt and pepper to taste.
